Chettinad Chicken Recipe

 



Chettinad chicken is a popular South Indian dish known for its unique blend of spices and flavors. This spicy and flavorful chicken curry is made with a variety of aromatic spices, coconut, and tomatoes. 

Here is a step-by-step guide on how to prepare Chettinad chicken

Ingredients:

500 grams of chicken (with bones)

1 onion, chopped

2 tomatoes, chopped

1 tablespoon ginger-garlic paste

1/4 cup grated coconut

2 green chilies, slit

1 teaspoon fennel seeds

1 teaspoon cumin seeds

1 teaspoon black peppercorns

2-3 dried red chilies

1 cinnamon stick

3-4 cloves

2-3 cardamom pods

1 teaspoon coriander powder

1/2 teaspoon turmeric powder

Salt to taste

Oil for cooking

Fresh coriander leaves for garnish

Instructions:

1. Wash the chicken thoroughly and drain the water. Set aside.

2. Heat oil in a deep frying pan over medium heat. Once the oil is hot, add the chopped onions and fry until they turn golden brown.

3. Add the ginger-garlic paste and fry for a minute until the raw smell disappears.

4. Add the chopped tomatoes and cook until they become soft and mushy.

5. Add the grated coconut, green chilies, fennel seeds, cumin seeds, black peppercorns, dried red chilies, cinnamon sticks, cloves, and cardamom pods. Mix well and fry for 2-3 minutes until the spices release their aroma.

6. Add the coriander powder, turmeric powder, and salt to taste. Mix well and saute for a minute.

7. Add the chicken pieces to the frying pan and mix well until the masala coats the chicken pieces evenly.

8. Add 1/2 cup of water and stir well. Cover the pan with a lid and cook on low heat for 25-30 minutes or until the chicken is tender and fully cooked.

9. Once the chicken is cooked, increase the heat and stir-fry until the masala is dry and the chicken is lightly fried.

10. Garnish with chopped fresh coriander leaves and serve hot with steamed rice or roti.

Tips:

Use fresh and good quality chicken for the best results.

Adjust the quantity of spices according to your preference for spiciness.

Always use a deep frying pan with a lid to ensure even cooking and to prevent the masala from burning.

The Chettinad chicken curry tastes even better the next day as the spices blend well together. Therefore, you can prepare it in advance and store it in the refrigerator for up to 2-3 days. Reheat the curry before serving.
