Kothu Parotta Recipe







Kothu Parotta is a popular South Indian street food that is famous for its spicy, tangy and flavorful taste. It is made with shredded parotta and mixed with onion-tomato masala and various other ingredients.

Ingredients:

4-5 leftover parottas or frozen parottas
1 onion, finely chopped
2 tomatoes, finely chopped
2-3 green chillies, finely chopped
1 tsp ginger-garlic paste

1 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp garam masala powder
1/2 cup shredded chicken (optional)
2 tbsp oil
Salt to taste
2 tbsp chopped coriander leaves

Instructions:

  1. Cut the parottas into small pieces using a sharp knife or shred them using your hands. Make sure that the parottas are not too thick or too thin.
  2. Heat oil in a pan or a kadhai and add cumin seeds. Let it crackle for a few seconds.
  3. Add chopped onions, green chillies and ginger-garlic paste. Saute till the onions turn translucent and the raw smell of the ginger-garlic paste goes away.
  4. Add chopped tomatoes, turmeric powder, coriander powder, garam masala powder and salt. Mix well and cook till the tomatoes become soft and mushy.
  5. Add shredded chicken (if using) and cook for 3-4 minutes or till it is cooked through.
  6. Add the shredded parotta pieces to the masala and mix well. Make sure that the parotta pieces are well coated with the masala.
  7. Keep stirring the mixture continuously and break the parotta into smaller pieces using a spatula or a ladle. This is the key step to making the kothu parotta. The parotta pieces should be broken into small pieces to ensure that they are evenly coated with the masala and are slightly crispy.
  8. Cook for 5-7 minutes or till the parottas are well coated with the masala and are slightly crispy. Keep stirring the mixture continuously to avoid burning.
  9. Garnish with chopped coriander leaves and serve hot with raita or pickle.

  • You can use leftover parottas or frozen parottas to make Kothu Parotta. If using frozen parottas, thaw them first before cutting or shredding them.
  • You can also add vegetables like carrots, peas or capsicum to the masala to make it more nutritious.
