Chicken Biryani Recipe

 



Chicken biryani is a popular Indian food. 

Here's a recipe to prepare Chicken biryani at home:

Ingredients:

For the Marinade:

900 grams of chicken, cut into small pieces

1 cup yogurt

2 teaspoons red chili powder

1/2 teaspoon turmeric powder

1 tablespoon ginger-garlic paste

1 teaspoon cumin powder

1 teaspoon coriander powder

1 teaspoon garam masala

Salt

For the Rice:

2 cups long-grain basmati rice

1 cinnamon stick

2 bay leaves

4 cloves

4 green cardamom pods

1 teaspoon cumin seeds

Salt

For the Biryani:

2 onions, sliced

2 tomatoes, chopped

1/4 cup chopped coriander leaves

1/4 cup chopped mint leaves

2 green chilies, slit

1/4 cup ghee (clarified butter)

1/4 cup oil

1/2 teaspoon saffron threads

1/4 cup milk

Fried onions for garnish


Instructions:

For the Marinade:

1. In a mixing bowl, add yogurt, red chili powder, turmeric powder, ginger-garlic paste, cumin powder, coriander powder, garam masala, and salt. Mix well.

2. Add chicken pieces to the bowl and coat them with the marinade. Cover the bowl and let it marinate in the refrigerator for at least 2 hours or overnight.

For the Rice:

1. Rinse the rice in water and soak it in water for 30 minutes.

2. In a large pot, bring 4 cups of water to a boil. Add cinnamon sticks, bay leaves, cloves, green cardamom pods, cumin seeds, and salt to the pot.

3. Drain the soaked rice and add it to the pot. Let it cook until the rice is 70% cooked. Drain the water and keep the rice aside.

For the Biryani:

1. Heat ghee and oil in a large pot over medium heat. Add sliced onions and fry until they turn golden brown.

2. Add chopped tomatoes, coriander leaves, mint leaves, and green chilies to the pot. Mix well and cook for 2-3 minutes.

3. Add marinated chicken pieces to the pot and mix well. Cover the pot and let it cook for 10-15 minutes or until the chicken is cooked through.

4. In a small bowl, add saffron threads and milk. Mix well and keep it aside.

5. In a large pot, spread a layer of cooked rice at the bottom. Add a layer of chicken mixture on top of the rice.

6. Repeat the layers until all the rice and chicken mixture is used up.

7. Drizzle the saffron milk over the rice and chicken layers.

8. Cover the pot with a tight-fitting lid and place it on a low flame. Let it cook for 10-15 minutes or until the rice is fully cooked.

9. Turn off the heat and let the biryani rest for 10-15 minutes.

10. Garnish with fried onions.
